Tomato and Avocado Salad

Tomatoes and avocado go surprisingly well together.

The other day I diced an avocado and two tomatoes and served them with some vinaigrette I had left over from the tomato and arugula salad I served when Tracie was visiting.

It was a great side salad to a meal of beans and rice.

Oftentimes, simple is best.

Fennel, Apple and Avocado Salad



I served this fun crunchy salad the other night with a meal of leftover beans and rice. It added a great counterpoint to the meal.

The bashed peppercorns add a zest when you bite into one, and the tart granny smith apple plays well with the fennel and mild Susanna avocado. The fennel adds a good crunch.

I suppose the pink grapefruit zest is not essential, but it added a citrus note without any juice.

Altogether a delicious side salad.


Fennel, Apple and Avocado Salad
2 tsp crushed peppercorns
2 tsp chopped drained capers
¼ tsp fleur de sel
¼ tsp pink grapefruit zest
3 tbsp olive oil
3 tsp chopped dill
1 avocado, cut in thin wedges
1 cup thinly sliced fennel
½ granny smith apple, thinly sliced

Combine peppercorns, capers and salt in a small bowl. Separately, whisk the grapefruit zest with the juice, oil and dill. On a serving plate, layer the avocados, fennel and apple. Drizzle with the vinaigrette and sprinkle with some of the salt mixture.Serve immediately, passing the extra salt at the table.

Rice Salad with Eggs and Green Beans

It's been too hot to cook, so I've been relying on salads at dinner time.

This one, with eggs and rice and corn, was a truly complete meal. We ate almost all of it in one sitting, and I took the leftovers for lunch the next day. That is the sign of a good salad.

A note about the rice: Usually I make this salad with brown rice, but I had spent the early evening puttering in the garden so to get this salad on the table in a timely manner, I used white jasmati rice – an organic rice from Texas that my local independent grocery store carries. It has a great flavor, and I had dinner on the table in under 45 minutes.

Rice Salad with Eggs and Green Beans
1 red pepper
1/2 cup onion, sliced in rings
2 cups cooked rice
4 oz (large handful) green beans
1/2 cup corn (frozen is fine)
2 eggs
1 small avocado
butter lettuce
1 tbsp capers
6 olives, sliced

Dressing:
1  clove garlic, minced
1/2 cup olive oil
2 tbsp lemon juice
3 tbsp yogurt
1/2 tsp dijon

Cut the red pepper in half. Remove the seeds and membranes. Place cut-side down in a small roasting pan. Add the onion rings. Sprinkle the onion with a little olive oil, then cook them under a broiler for 5-6 minutes until the pepper starts to blacken. Stir the onion a couple of times so it turns golden, not black. Put the pepper halves in a pot and let them steam gently. Cut the onion rings up and stir them into the rice. Put the rice on a large platter.

When the peppers are cool enough to touch, scrape off the skin (as much as you can) and cut them into thin strips.

Pierce the eggs with a pin and put them in a pan of boiling, salted water for 10 minutes. Drain and refresh in ice water. When cool enough to touch, peel off the shells and cut the eggs in quarters.

Cook the green beans in a little boiling water for 2 minutes, then add the corn and cook another 2 minutes. Drain and put in a bowl with the red pepper strips.

Stir together the washed and torn lettuce leaves with the peeled and diced avocado. Pile them on the rice.

Whisk together the dressing ingredients. Put about half into the bowl with the green beans and toss gently. Pile this on top of the salad.

Decorate the platter with the eggs, olives and capers.

Serve the extra dressing on the side.

Apple and Goat Cheese Salad

Even the evenings have been hot over the last week or so. Too hot to even think about barbecuing or turning on the stove for dinner.

So we've been eating a lot of main course salads. Sunday night I combined honey crisp apples, walnuts and goat cheese to make a nourishing meal that tempted our appetites despite the heat.

I added a little honey to the salad dressing, which I don't usually do. But we needed a little sweetness after the heat of the day, and it balanced the lemon and tarragon well. The dressing would be good on any green salad. It will last a few days in the fridge.

Apple and Goat Cheese Salad
5 cups torn romaine lettuce
1/2 Haas avocado
1 honey crisp apple
1 hard-boiled egg
3 oz goat cheese, crumbled
1/4 cup toasted walnuts

Dressing:
1 tbsp lemon juice
1 clove garlic, peeled and minced
1/2 tsp honey
1/2 tsp salt
1/8 tsp pepper
1/4 olive oil
1 tbsp tarragon, chopped

Arrange the lettuce on a serving platter. Peel and slice the avocado. Core and slice the apple. Peel and quarter the egg. Arrange the avocado, apple and egg on the lettuce. Crumble the goat cheese in the center and then the toasted walnuts on top.

Whisk the lemon juice, garlic, honey, salt and pepper in a small bowl. Whisking constantly, add the olive oil until the mixture emulsifies. Whisk in the tarragon.

Drizzle 3/4 of the dressing over the salad and serve the extra dressing on the side.

Serves 2 as a main course.

Watercress and Avocado Sandwich

I placed the chicken wire over the pot to
keep the squirrels from digging up the earth.
Our watercress is growing well on the patio. It wilted in the recent ridiculously hot weather, but it bounced back with cooler (70s) weather.

I picked some spicy sprigs the other day and added them to a sandwich with an excellent avocado on Alvarado St. sprouted wheat bread.

There's nothing like fresh-picked greens to make a meal special.

But even if you have to buy your watercress at the market, you can have a delicious sandwich. (Although I recommend sprinkling some seeds on a pot of earth and seeing what you can grow.)

Before the top piece of bread is added.
Watercress and Avocado Sandwich

whole grain bread
avocado
watercress
lime
salt and pepper

Peel and slice the avocado. Put slices on one piece of bread. Squeeze lime juice over it. Sprinkle with salt and pepper.

Mash a couple of slices on another piece of bread. Place watercress over the mashed avocado.

Put the two pieces on top of each other. Enjoy.

Portobello Mushroom Burger

Who needs meat when you have a portobello mushroom?

I had the most delicious burger ever on Memorial Day.

It was a portobello grilled with a marinade of 1 tbsp olive oil, 1 tsp balsamic vinegar and 1 tsp tamari. Larry did the cooking, and says he poured a little beer on it to make it extra good. I believe him, although he was drinking Corona which doesn't really have a lot of flavor.

Then I placed it on a mediocre Whole Foods bun spread with chipotle mayonnaise, and added a slice of grilled red onion and a few wedges of avocado. What a feast!

It's easy to make your own chipotle mayonnaise. Start by puréeing a small can of chipotles in adobo sauce. Store this spicy paste in a jar in the fridge and add spoonfuls to soups, stews - anything that needs a kick. Stir a little into mayonnaise along with a squirt of lemon or lime juice for a zesty spread that will improve any sandwich or burger.

Avocado and Strawberry Salad

It was too hot to cook the other night, so I rooted around in the fridge. Strawberries and butter lettuce from Finley Farm, avocado from Jorge --  that's the making of a great hot-weather supper.

I used equal quantities of oil and vinegar because I wanted a tart dressing to off-set the incredibly sweet berries. The goat cheese toasts mellowed the tartness and gave a rich earthiness that matched well with the toasted almonds.

Best of all, it went together in a flash

Avocado and Strawberry Salad
lettuce for 2 people
1 ripe avocado
1 cup strawberries
2 tbsp canola oil
2 tbsp red wine vinegar
1/4 cup almonds
2 oz goat cheese
crushed peppercorns
6 slices baguette


Wash the lettuce and tear into bite-sized pieces. Peel and dice avocado. Remove the stem from the strawberries and halve them. Toss lettuce, avocado and strawberries together.

Toast the almonds in a dry frypan on the stove. When they smell toasted, remove from heat and chop coarsely.

Lightly toast the baguette slices in the toaster oven or under the broiler. Turn the slices over. Cut the goat cheese into 6 and pat it into rounds. Roll the edges of the rounds into the crushed peppercorns (this is messy, but worth it.) Put the goat cheese on the baguettes and warm in the toaster oven.

Combine the oil and vinegar. Season with a little salt and pepper and toss with the salad.

Arrange on a serving plate, sprinkle the almonds over top, and arrange the goat cheese toasts around the edges.

Serves 2
